Alicia P.Cárdenas-Castro was recognized with the SNI (Researchers National System) level 1 distinction in November 2022. She has 13 scientific publications and 2 book chapters and her goal is to continue learning as a researcher. During her master's and phD research, the aim was to investigate the changes and microbial metabolites produced during in vitro simulated human digestion of “Serrano” hot pepper, fried beans, and Mexican sauces. The scientific interests are the pre-Hispanic diet, and experience in microbiota analysis may allow her todevelop in the line of research on the development of functional foods from endemic underutilized plants and fruits.
