María Gudjónsdóttir

Prof. María Gudjónsdóttir – Professor at the University of Iceland, Faculty of Food Science and Nutrition, is specialized in process and production optimization and quality of food and bioactive compounds, especially from marine biomass sources. María has led and participated in several international and domestic research projects on process optimization, product development and innovation, sustainable processing, quality monitoring, food security and safety, and sustainable healthy diets.
